Heat the sesame oil in a large skillet over medium-high heat. Toss cabbage, onions, garlic and carrots. Stir and stir until the cabbage is softened. Mix in the shield and eggs. Continue frying until the pan is browned and the eggs are firm.
Heat the vegetable oil in a large pan over medium heat.
Place about 1 tablespoon of the cabbage and mince mixture in the middle of each slice of dough, then fold the dough in half to turn the meat inside out, and knead it with wet fingers (using the same technique as for wrapping vareniki).
Dip in heated vegetable oil and simmer on each side for about 1 minute, until lightly browned. Then turn off the water, lower the temperature, cover and simmer until the water is completely dry.
Mix soy sauce and rice vinegar in a small bowl and use as a sauce for your gio.
