Eggplant and zucchini with cheese

Preheat the pan to medium heat and pour in the oil. Press eggplant and zucchini into thin thin slices. Bake on each side for 2-2 minutes until softened and slightly browned. Transfer to a plate. Preheat the oven to above-average temperatures.

Transfer one third of the eggplant, zucchini, sauce and cheese to a baking dish. Repeat similarly for the next 2 layers.

Bake for 5 minutes until the cheese is melted and lightly browned. Enjoy.
