Chikhirtma – Georgian Chicken Soup
Boil the whole chicken. Then temporarily remove from the pot and put the broth on low heat.
Finely chop the onion, remove only the fatty part of the broth and pour it. Add salt and cook on a baking sheet, then return to the broth.
Dissolve bread flour in one glass of cold water and add it to the broth during the boiling period, stirring constantly.
Beat two eggs with about 2-3 tablespoons of vinegar (or more if desired), add to the broth and stir constantly so that the eggs do not crack.
Finally, add salt to the broth, add chopped chicken pieces and finely chopped coriander. Enjoy!
